Ruby red with garnet shades with intense, fruity and floral aromas, mature and complex notes that comes from the evolution in bottle as well as spicy flavour and balsamic notes. Solo Uno has good structure, velvet tannins and excellent tasteful freshness with an elegant body.
Better served with red meats, game or with flavoured dishes such as mushrooms and truffle or strong aged cheeses.
Manual harvest of the best bunches and subsequent selection. Cold maceration for 48 hours, temperature-controlled fermentation in stainless steel for 20-25 days with daily pumping over and gentle pressing. Maturation in new barrels for 15-18 months and further aging in bottle.
