Vinsanto means “wine of the saints” or “holy wine” and it’s a typical niche Tuscan product produced from a selection of the best bunches of white grape cultivates at the estate. Bright amber with intense aroma and hints of raisins, honey, caramel, sweet spicy, chocolate, cloves and dry fruits such as almonds and nuts, dried figs or apricot. Harmoniously blended, slightly sweet, soft and intense with a long persistence where you can recognize the same aromas smelled before.
It’s a sweet wine so you can pair with all kind of desserts as apple pies, carrot cake, dry pastries, vanilla gelato or dark chocolate as well as with savoury food as blue cheese or meat pate.
Just the perfect and healthy bunches of Trebbiano grapes will become Vinsanto. After the harvest we hang the grape to let it dry for almost 4-6 month (until become similar to raisins) and gentle pressed to have a sweet juice to be fermented inside the “caratelli” (small barrels). The fermentation take place inside the barrels and the yeast, at a certain point, go dormant and stop to work (we have a high concentration of sugar in the final wine). It is aged in the same caratelli for at least 10 years and further refinement in bottle. It is an oxidized wine and because of this could be store (close or open) for years, it doesn’t spoil with time.
