The Cuscusa Organic farm and vineyard is located in the Marmilla, what the ancient Romans defined as their “bread basket”. In front of an extinct volcano and one of the oldest Obsidian mines in Europe. Michele Cuscusa, shepherd and vintner, makes wine and cheese as about as authentic and natural as you can get. The wines contain 40% less added sulfites than most wines. The soil is clay and basalt which make for wines with a wonderful minerality and sapidità (sea saltiness) or simply volcanic wines. Up until a few years ago, it was very rare to see Rosé made from Cannonau in Sardinia but now vintners are having a lot of success by leaving contact with the skin for 4-8 hours max. If we were to blindfold you, I think you might say this is a very clean, fruity, versatile, highly mineral red or white wine. You can surely pair this wine with both fish or lighter meats and cheeses. Like all of Michele’s wines, you can spend a long time describing the different flavors from peach to rasberry to balsamic (mirto) and the over 150 indigenous plants he has on his organic farm.
