Description

Numero Otto is a niche product since the first harvest of 2003. Wine made from a selection of 100% Canaiolo grapes from old vineyards planted in 1975.

Ruby red with intense fresh red berries aromas and floral notes as violet and balsamic hints of eucalyptus. Its freshness, intensity and firm structure are no detriment to its immediate drinkability and pleasure. Medium-bodied wine, tannic structure with light balsamic hints, smooth and silky tannins (characteristics of this particular grape).

Good with white meats, vegetable based-dishes or fresh cheeses but also with spicy fish soups or tuna tartare.

Production method and aging

Cold maceration for 48 hours and successive fermentation in stainless steel vats at temperature controlled for 14 days with daily pumping over and gentle pressings. Aging in French oak barrels for 8 months and further refinement in bottles for minimum 6 months.
